It was published in NUTRITO (the on-line magazine edited by ICIF) my interview with Paola Colombo.

She’s works for the FARINA Restaurant in San Francisco, producing bread and pastries.

She wasn’t at all satisfied with the quality of the bread served in the restaurant. “So, I began to research and to experiment – even in my own home oven”.
